Easy Sheppard’s Pie

9 Jul

This is an inexpensive and easy to prepare family meal. To make this meal faster, prepare boxed potato flakes in place of home-made mashed potatoes or use left-over mashed potatoes.

Serves 4 people

4 large russet potatoes, peeled

2 Tbsp butter

½ cup milk

1 lb ground beef

1 onion, chopped

1 cup cheddar cheese

Start Preparing

  1. Preheat oven to 350 degrees.
  2. Cover potatoes with water in pot; Cook until potatoes are tender, about 15 minutes; Drain.
  3. In pan, brown ground beef with chopped onion until cooked through; Drain.
  4. Mash potatoes, adding butter, milk, salt and pepper.
  5. Spray a pie dish with cooking spray. Place ground beef mixture in dish. Layer mashed potatoes on top and cover with cheese.
  6. Bake for 20-30 minutes, or until cheese has melted and browned.

Also delicious if you add corn under the cheese layer!

Yes it is! I have tried that. I usually just leave the corn out though b/c even though corn is a veggie, I almost consider it more of a starch. And 2 starches (potatoes and corn) arent so healthy. I just serve it with a veggie or salad on the side. Thanks for reminding me of that variation though Sheryl!

Very true..it is more of a starch in my book too. But I think Brian would fire me from being a stay at home mom if I left out his corn. LOL. By the way..I love the way you make the pictures scroll through like that. Very cute!
