God is Smiling

I have been thinking about the blessings that God has provided my family and I with, not only recently, but during my lifetime, and today, I just cant get the feeling of God smiling down on us, off of my mind. Have you ever felt like this? Have you ever sat down and felt as if the God that created you and me, was happy and pleased and smiling down at you? We all face difficult times, times when you can’t seem to get a break, everything seems to be crashing down around you and you can’t do anything about it… days when you wish that you could just crawl underneath a rock and take a long nap and wake up and everything in your world be perfect. Well, in the course of me looking back on my short little life, I am now realizing, nothing is perfect, nothing is as it seems, and sometimes, you can’t change everything for the better…. but there is ALWAYS one constant: GOD!

And today, I believe that God is looking down smiling…. like he does every day, on everybody, but maybe because, in a time of struggle, and sadness, I took a moment, or God took a moment, to let me know that He still has my family in His hands, that we are not forgotten, and that He believes in us, in our ministry and in our future!

George, the Chef!

So, I have started working part-time in the evenings after George gets home a few nights a week. Well, I usually cook dinner for my family before I leave, but in some case, I either dont have time, know that they can find something to reheat, or, in last nights case, figured George could handle putting together some grilled cheeses for him and the kiddos. In the past (almost) 6 years that my hubby and I have been married, I can really only count on one hand how many times he has cooked dinner. And one of those times was heating up a pizza (which was a HUGE deal to him because he took MANY pictures of this and made it seem like he had just prepared a gourmet meal!) and the other few times he has fixed grilled cheese. At no point, do I ever recall him fixing anything that required much effort. Oh, wait, I am now recalling a faint, distant, very distant, memory of him making spaghetti one evening when I was working late. I was super proud of him for this LARGE accomplishment and the lack of meat in the spaghetti sauce! HAHA

 Well, I say all this so that I can let you view the pictures of George’s “Gourmet” meal that he had to fix for himself and the kids last night…

Man, if I had a more talented husband I just don’t know what I would do with myself!! 🙂

P.S. I love you babe, and thanks for the well-balanced meal you prepared our kids last night! Your the best! :0)

Cheesy Chicken and Broccoli Bake

BEWARE: This is very cheesy!! But that’s the way I like everything! 🙂

Ingredients

2 cups Cooked Chicken, diced

1 can Cream of Chicken Soup

1 small brick Velveeta Cheese, diced

16-oz pkg Frozen Broccoli, thawed

1 row Ritz Crackers, crushed

Start Preparing

  1. Preheat oven to 350 degrees. Grease an 8×8 casserole dish.
  2. Combine chicken, soup, velveeta and broccoli in bowl and stir. Pour into greased dish.
  3. Bake for 30 minutes.
  4. Remove and sprinkle ritz crackers on top and bake a remaining 15 minutes.

Coffee-Mate Party Recap

Last night was my Coffee-Mate Free Flavor Friday party that I had blogged about hosting a week or so ago. It went great! The coffee, fingerfoods, and conversations were wonderful. Everyone seemed to really enjoy the coffee and maybe perhaps, with the help of Coffee-Mate creamer, I may have converted some from the ordinary milk and sugar creamer.

Thanks to all that came and to Coffee-Mate for the great experience!

BBQ Meatballs

I made these for the first time the other day, and just like I remember from my dad and stepmom making them, they were DELICIOUS!! They also feed a crowd, so if you do not want to feed more than 8 people, then just cut the recipe in half. And dont forget to serve them over buttered egg noodles!

Ingredients

Meatballs:

12 oz can Evaporated Milk

1 tsp Pepper

1/2 cup Onion, chopped

2 tsp Salt

2 cups Quick-Cooking Oats

3 lbs Ground Beef

2 Eggs

1/2 tsp Garlic Powder

Sauce:

2 cups Ketchup

2 Tbsp Liquid Smoke

1/2 tsp Garlic Powder

2 cups Brown Sugar

1/2 cup Onion, chopped

Start Preparing

  1. Preheat oven to 350 degrees and spray a 13×9 pan with Pam.
  2. Mix together all ingredients for meatballs and combine well (best if you dig in with your hands!).
  3. Shape mixture into walnut-sized balls and place into greased pan. Meatballs can be on top of each other. (At this point you can either prepare sauce now or refrigerate overnight for completion the next day.)
  4. Heat ingredients for sauce on medium heat for about 3 minutes. Pour over meatballs.
  5. Bake for 1 hour.

Serve with buttered egg or stroganoff noodles.
