BBQ Meatballs

I made these for the first time the other day, and just like I remember from my dad and stepmom making them, they were DELICIOUS!! They also feed a crowd, so if you do not want to feed more than 8 people, then just cut the recipe in half. And dont forget to serve them over buttered egg noodles!

Ingredients

Meatballs:

12 oz can Evaporated Milk

1 tsp Pepper

1/2 cup Onion, chopped

2 tsp Salt

2 cups Quick-Cooking Oats

3 lbs Ground Beef

2 Eggs

1/2 tsp Garlic Powder

Sauce:

2 cups Ketchup

2 Tbsp Liquid Smoke

1/2 tsp Garlic Powder

2 cups Brown Sugar

1/2 cup Onion, chopped

Start Preparing

  1. Preheat oven to 350 degrees and spray a 13×9 pan with Pam.
  2. Mix together all ingredients for meatballs and combine well (best if you dig in with your hands!).
  3. Shape mixture into walnut-sized balls and place into greased pan. Meatballs can be on top of each other. (At this point you can either prepare sauce now or refrigerate overnight for completion the next day.)
  4. Heat ingredients for sauce on medium heat for about 3 minutes. Pour over meatballs.
  5. Bake for 1 hour.

Serve with buttered egg or stroganoff noodles.

Easy Sheppard’s Pie

This is an inexpensive and easy to prepare family meal. To make this meal faster, prepare boxed potato flakes in place of home-made mashed potatoes or use left-over mashed potatoes.

Serves 4 people

Ingredients

4 large russet potatoes, peeled

2 Tbsp butter

½ cup milk

1 lb ground beef

1 onion, chopped

1 cup cheddar cheese

Start Preparing

  1. Preheat oven to 350 degrees.
  2. Cover potatoes with water in pot; Cook until potatoes are tender, about 15 minutes; Drain.
  3. In pan, brown ground beef with chopped onion until cooked through; Drain.
  4. Mash potatoes, adding butter, milk, salt and pepper.
  5. Spray a pie dish with cooking spray. Place ground beef mixture in dish. Layer mashed potatoes on top and cover with cheese.
  6. Bake for 20-30 minutes, or until cheese has melted and browned.
