Quick Mexican Pasta

I was in the mood for pasta the other night… not very unusual for me considering I LOVE pasta… but wanted to merge it with mexican… because I was also in the mood for that. Not wanting to run to the store, I grabbed a few pantry staples and put this quick and easy pasta dish together. I will add pictures later…

Ingredients

2 cups Pasta (whatever shape you prefer)

3/4 cup Salsa

1/2 cup grated Cheddar Cheese

Start Preparing

  1. Cook pasta according to package directions; Drain.
  2. Add salsa and combine well.
  3. Add cheese and stir, on low heat, until cheese melts.
  4. Top with sour cream if desired.

This was a hit in my family. I paired it with some cheese quesadillas and we loved it. A very quick, easy and budget-friendly meal!!

Spinach and Cheese Quiche

I decided to make quiche for dinner. I usually do my quiches with bacon but decided to have a meat-free dinner. I actually think it turned out better without the bacon! Will be holding on to this recipe…

Ingredients

1 Tbsp butter

1 medium onion, diced

6-8 ounces frozen spinach, thawed and squeezed dry

1/2 cup cheddar cheese

3/4 cup swiss cheese

dash of salt and pepper

5 eggs

1 cup heavy whipping cream (or milk can be used instead)

1/2 cup cheese (mix of cheddar and swiss)

Start Preparing

  1. Preheat oven to 375 degrees.
  2. Melt butter in pan and add onions and saute about 5 minutes or until tender.
  3. In a bowl, combine cooked onions, spinach, cheddar and swiss cheese and salt and pepper; Mix well and spoon into crust.
  4. In another bowl, whisk eggs with whipping cream until combined; Pour over spinach mixture in crust.
  5. Bake for 15 minutes in preheated oven.
  6. Remove and top with 1/2 cup cheddar and swiss cheese.
  7. Bake for 30 more minutes. Let stand for 5 minutes before serving.

Fast and Easy Pasta Dinner

This is what we had for dinner tonight. SUPER quick and easy! I meant to add spinach to it but forgot… will have to try next time.

Ingredients

1-16 oz box fettuccine noodles

1 Tbsp olive oil

1 cup cherry tomatoes

3 Tbsp butter

3 cloves garlic, finely chopped

1/4 tsp dried basil

1/4 parmesan cheese

1/2 cup mozzarella cheese, shredded

Start Preparing

  1. Cook fettuccine noodles according to package directions, about 11-12 minutes; drain.
  2. In a seperate pan, heat olive oil. Toss in 1 Tbsp butter, tomatoes, garlic, and basil. Cook until tomatoes begin to burst.
  3. Combine tomatoe mixture with the cooked noodles. Add mozzarella and parmesan cheese.

Lasagna Roll-Ups

I made these for the first time and they were delicious. They are also very versatile. Feel free to make them vegetarian with some tofu, or add a few different kinds of meats.

Ingredients

1 pkg Lasagna noodles

1 small container Ricotta

2 cups mozzarella cheese, shredded

10 ounces frozen, chopped spinach, thawed and drained

2 cups parmeasan cheese

1 medium onion, finely chopped

1 tsp garlic

1 tsp Italian seasoning

1 jar pasta sauce

1 tube Italian sausage

Start Preparing

  1. Cook lasagna noodles according to package directions; Run through water; Drain. Lay noodles out onto wax paper.
  2. Cook italian sausage in skillet; Drain.
  3. Preheat oven to 350 degrees.
  4. In large bowl, combine ricotta cheese, 1 cup mozzarella cheese, spinach,  1 cup parmesan cheese, onion, garlic and italian seasoning.
  5. Put about 1-2 tablespoons of cheese mixture on each cooked lasagne noodle. Lay a thin layer of pasta sauce on top of cheese and then roll up noodle. Repeat until all noodles are complete.
  6. Lay rolled lasagne noodles, seam side down, in a sprayed 9×13 baking dish.
  7. Combine remaining pasta sauce and cooked italian sausage together. Spread over rolled noodles. Sprinkle remaining mozzarella and parmesan cheese on top and bake 30 minutes, or until hot and bubbly.
